Matcha, a bright green powder from finely ground shade-grown tea leaves, originated in ancient China and thrived in Japan. Grades are categorized by particle fineness (measured in mesh) and color:
- Ceremonial grade: ≥1000 mesh (≤15 microns), vivid emerald green, ultra-smooth texture, intense umami with balanced sweetness, minimal bitterness. Ideal for tea ceremonies.
- Culinary grade: 800–1000 mesh (15–20 microns), deep green (slight grayish tint), slightly coarser. Richer bitterness suits baking, lattes, and recipes.
- Economy grade: 600–800 mesh (20–30 microns), pale olive-green, grainy texture. Strong earthy notes and astringency, used in budget drinks or snacks.
In China, the matcha industry is expanding rapidly. Advanced milling technologies (e.g., stone grinding) improve fineness, while domestic brands offer diverse grades for both traditional and modern uses, blending heritage with market demands. Flavors range from delicate, floral umami (ceremonial) to robust, bitter-earthy (economy).
